Ingredients and spices that need to be Get to make Chilli paneer:
- 3 tablespoons vegetable oil (or any cooking oil of preference)
- 1 small white onion, finely diced
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 3 slices red or green chillis, pierced in the centre
- 500 g paneer, cut into cubes (I used HomeVille brand, precut bought at an Indian supermarket)
- 2 teaspoons cumin powder
- 1 teaspoon cardamom powder
- 1 teaspoon turmeric powder
- 1-2 teaspoons chilli powder (hot or mild, depending on preference)
- 1 red bell pepper, cut into chunks
- Splash light soya sauce to taste
- 1/2 teaspoon ketchup
- 1/2 spring onion, roughly sliced
- Handful fresh coriander leaves
Instructions to make to make Chilli paneer
- In a wok on high heat, add the cooking oil and let it heat up. The oil should be really hot when doing this as you will be stir frying the ingredients. Once the oil is very hot, add the onions and stir continuously to prevent it burning. Cook for a minute, then add the garlic and ginger. Keep stirring and cook until brown.

- Once the onions, ginger and garlic have browned, add the chillis. Stir to infuse the flavours together, once well incorporated add the packet of paneer to the wok. Increase the heat to the highest setting and cook the paneer until it becomes brown.



- Once paneer has browned, it is time to add the spices. Add the ground cumin, cardamon powder, turmeric and chilli powder. Mix thoroughly into the paneer and cook out the spices. Once the spices have cooked out a little add the red peppers and cook to softness preference (crunchy or soft texture).

- Once peppers are to desired softness, add light soya sauce around the rim of the wok. Stir into the mixture to combine it. Taste it and adjust if necessary (another splash of soya sauce around the rim of the wok to make it saltier and stir again). Then add a splash of ketchup to balance our the flavours and taste it (add a bit more if you prefer it sweeter). Turn the heat to low.

- To garnish add sliced spring onions and a handful of fresh coriander leaves. Cook for another minute, give it a final stir and turn the heat off. Cover with a lid until ready to serve.

- To serve transfer onto a serving plate or bowl and serve it with a bowl of rice steamed basmati rice, naan bread or any Indian bread/rice of choice and other side accompaniments.
